1 non-stick cooking spray, butter or favourite vegetable oil

¾ cup cocoa powder

1 ½ cups of sugar

1 tsp of salt

1 ½ cups of flour

¼ cup of leftover coffee grounds

1 tsp of espresso grounds or finely ground coffee

Choose any of our coffee beans for this recipe, which all work well with excellent results

1 cup of chocolate chips

4 eggs

1 tablespoon of vanilla

½ cup of vegetable oil


  • Preheat the oven to 350°.
  • In a large bowl whisk together all of the ingredients until combined.
  • Next, spray ( or grease) a 9x9 or 8x8 baking dish with and pour the brownie batter in.
  • Bake at 180°C for 40 to 45 minutes or until the center is slightly firm
  • Cool to room temperature before serving.
  • Goes very well with your favourite Hillbilly Coffee.
